Pão de espelta e mel de cana - Spelt and treacle bread

Para o Bread Baking Day # 62, o desafio é escolher um dos pães confecionados por ocasião do World Bread Day. Foram muitos os países que participaram e muitas receitas fantásticas desfilaram, pelo que tive bastante dificuldade em escolher! Mas acabei por optar por este pão de espelta e mel de cana do Ma Petite Boulangerie.

Bread Baking Day #62 is entitled Bread Baking Day meets World Bread Day and invites us to choose one bread from the roundup of WBD. Many countries participated and there were lots of excellent recipes to choose from, so the task was hard! I finally decided for this spelt and treacle bread from Ma Petite Boulangerie.




Noite do primeiro dia:

120 g de isco de trigo integral
200 g de farinha de trigo integral
210 g de água tépida


Juntar todos os ingredientes numa taça de vidro até obter uma mistura homogénea. Tapar com um saco de plástico e deixar repousar 12 horas.



First day - around dinner time

120 g wholewheat starter
200 g wholewheat flour
210 g lukewarm water

First step - feed the starter. Mix everything in a big glass bowl. Let it rest on the kitchen table, covered with a plastic bag, for about 12 hours.




Manhã do segundo dia:

Mistura do dia anterior
200 g de farinha de trigo branca
300 g de farinha de espelta
7 g de sal fino
20 g de mel de cana
200 g de água tépida
1 colher de sopa de óleo de girassol


Juntar o sal, a farinha de trigo e a de espelta. Envolver bem e abrir uma cova no meio.

À mistura do dia anterior, adicionar o mel de cana e a água. Misturar bem e verter na cova aberta nas farinhas.

Tapar com a farinha que fica nas margens, tapar com um pano e deixar repousar cinco minutos.

Bater na batedeira profissional à velocidade 2 durante 8 minutos.

Lavar e untar com óleo de girassol a taça usada no dia anterior. Colocar aí a massa, virando-a para ficar coberta de óleo. Tapar com o saco de plástico e deixar repousar 4 horas.

Dar umas voltas à massa com cuidado e dar-lhe a forma desejada.

Colocar a massa num tabuleiro forrado com papel vegetal, tapar com um pano húmido e deixar repousar durante 4 horas.

Dar um corte na superfície do pão com uma faca afiada e levar ao forno a 230º durante 15 minutos. Baixar para 200º e deixar cozer mais 30 minutos. Desligar o forno e deixar o pão no interior a acabar de cozer mais 15 minutos.

Retirar e deixar arrefecer antes de fatiar.



Second day - early morning

Mix from the previous day
300 g spelt flour
200 g white wheat flour
20 g treacle
200 g lukewarm water
7 g salt
1 tablespoon of sunflower seed oil


Mix the water and the treacle with the starter from the previous day. Mix well with a wooden spoon.

Mix the flours and the salt. Open a pit in the middle of the flour mix and add the starter. Cover with the flour that remains on the sides and let it rest, covered, for about 5 minutes.

Knead the dough by hand or using the machine (speed 2 for about 8 minutes).

Wash the glass bowl and grease with sunflower seed oil. Put in the dough and make it go around so that it gets covered in oil.

Cover with the plastic bag and let it rest for about 4 hours.

After the resting time, gently fold the dough a couple of times and mold it to shape.

Put the dough in a baking sheet with parchment paper lining, cover with a damp cloth and let it rest for another 4 hours.

Make one cut on the loaf's surface with a sharp knife. Put it in the oven at 230º for about 15 minutes, then lower the temperature to 200º for 30 minutes more. Turn off the oven and let the bread rest inside for another 15 minutes.

Take the bread out of the oven and let it cool before cutting.

  2. Qué pan más bueno!! Desde que descubrimos la harina de espelta se ha convertido casi en un imprescindible a la hora de hacer pan. El toque de la miel es muy interesante.

  5. Estes pães de fermentação lenta e natural são os mais saudáveis e de melhor sabor. Tenho que criar o hábito de os fazer (é preciso programar bem o tempo necessário para se ter o pão feito na data necessária, não?): ficou lindíssino!
