Pão de espelta com cenoura e girassol - Carrot and sunflower seed spelt bread

Este pão de espelta com cenoura e girassol é a minha contribuição para o Bread Baking Day #58. Como é uma iniciativa internacional, é pedido que a receita seja escrita numa de duas línguas, pelo que encontrarão a tradução de cada passo em inglês.

This carrot sunflower seed spelt bread is my contribution to Bread Baking Day #58. As this is an international initiative, we are asked to write the recipe in one of two languages, that's why you'll find the english translation of every step.









Noite do primeiro dia:

120 g de isco de trigo
200 g de farinha de trigo integral
208 g de água tépida


O primeiro passo - alimentar o isco. Juntar todos os ingredientes numa taça de vidro grande e deixar repousar à temperatura ambiente, tapado com um saco de plástico, durante 12 horas.


First day - around dinner time

120 g wholewheat starter
200 g wholewheat flour
208 g lukewarm water


First step - feed the starter. Mix everything in a big glass bowl. Let it rest on the kitchen table, covered with a plastic bag, for about 12 hours.



Manhã do segundo dia:

Pré-fermento do dia anterior
160 g de farinha de espelta
240 g de farinha de trigo branca
240 g de farinha de trigo integral
145 g de cenoura ralada
50 g de sementes de girassol
200 g de água tépida
1 colher de sopa de mel
1 colher de sopa de sal
Um fio de azeite


Juntar a água, o mel e a cenoura ralada à mistura do dia anterior. Envolver bem.

Partir as sementes de girassol no moinho de café, tendo o cuidado de não as desfazer completamente.

Misturar as farinhas, as sementes e o sal. Abrir uma cova no meio e verter a mistura anterior. Tapar com a farinha que estiver nas margens e deixar repousar cinco minutos.

Bater na batedeira profissional durante 6 minutos a velocidade 2 ou amassar à mão.

Lavar a taça de vidro e untar com azeite. Colocar a massa depois de batida, virando-a em todos os sentidos para a cobrir de azeite. Tapar com o saco de plástico e deixar repousar durante 4 horas.


Second day - early morning

Mix from the previous day
160 g spelt flour
240 g white wheat flour
240 g whole wheat flour
145 g grated carrot
50 g sunflower seeds
200 g lukewarm water
1 tablespoon honey
1 tablespoon salt
A dash of olive oil


Mix the water, the honey and the grated carrot with the starter from the previous day. Mix well with a wooden spoon.

Grind the sunflower seeds, but not much (they should still be in small pieces).

Mix the flours, the sunflower seeds and the salt. Open a pit in the middle of the flour mix and add the starter. Cover with the flour that remains on the sides and let it rest, covered, for about 5 minutes.

Knead the dough by hand or using the machine (speed 2 for about 6 minutes).

Wash the glass bowl and grease with olive oil. Put in the dough and make it go around so that it gets covered in olive oil.

Cover with the plastic bag and let it rest for about 4 hours.



Hora de almoço do segundo dia:


Retirar a massa para uma superfície bem enfarinhada e, com as mãos enfarinhadas, delicadamente espalmá-la e dobrá-la em forma de envelope. Repetir a operação três vezes.

Colocar a bola de massa num tabuleiro de ir ao forno forrado com papel vegetal, salpicar com farinha, tapar com o saco de plástico e deixar levedar mais 4 horas.

Levar ao forno a 230º durante 20 minutos. Baixar a temperatura para 200º e deixar cozer durante mais 30 minutos. Desligar o forno e deixar o pão a acabar de cozer durante mais 15 minutos.

Retirar do forno e deixar arrefecer antes de fatiar.


Second day - lunch time

Take the dough out of the bowl to a surface dusted with flour. Gently, with dusted hands, spread it and fold it as if it were an envelope. Repeat this procedure three times.

Put the dough in a baking sheet with parchment paper lining, sprinkle some flour on top, cover with the plastic bag and let it rest for another 4 hours.

Put it in the oven at 230º for about 20 minutes, then lower the temperature to 200º for 30 minutes more. Turn off the oven and let the bread rest inside for another 15 minutes.

Take the bread out of the oven and let it cool before cutting.

  4. Que óptimo aspecto! Por acaso tenho em casa um pão muit parecido com este que compro numa padaria alemã aqui perto. Também tem cenoura e sementes de abóbora, mas é feito com uma farinha ainda mais escura. Quero ver se ainda consigo participar, mas a minha próxima semana está um pouco atrapalhada. Vamos ver.

  6. Uma vez que esta receita usa farinha de trigo 'normal', não faz qualquer sentido chamar-lhe 'pão de espelta com cenoura e sementes de girassol'. Trata-se de uma receita do tipo 'gato por lebre'.
    Para quê misturar a farinha de espelta, muito mais cara do que a farinha de trigo normal, com a farinha de trigo 'normal'?
    Afinal é o glúten do trigo 'normal', muito mais ácido e agressivo que o do trigo espelta, que se deve evitar.

    1. Uso a farinha de espelta nesta receita porque dá um sabor muito bom ao pão. Se não usa farinha de trigo, pode sempre substituí-la por outras farinhas!
