Pão de centeio com bagas goji - Rye bread with goji berries

Este pão de centeio com goji é a minha contribuição para o Bread Baking Day #57. Como é uma iniciativa internacional, é pedido que a receita seja escrita numa de cinco línguas, pelo que encontrarão a tradução de cada passo em inglês.

This rye bread with goji berries is my contribution to Bread Baking Day #57. As this is an international initiative, we are asked to write the recipe in one of five languages, that's why you'll find the english translation of every step.




Noite do primeiro dia:

120 g de isco de centeio
200 g de farinha de centeio integral
216 g de água tépida


O primeiro passo - alimentar o isco. Juntar todos os ingredientes numa taça de vidro grande e deixar repousar à temperatura ambiente, tapado com um saco de plástico, durante 12 horas.


First day - around dinner time

120 g rye starter
200 g whole rye flour
216 g warm water


First step - feed the starter. Mix everything in a big glass bowl. Let it rest on the kitchen table, covered with a plastic bag, for about 12 hours.


Manhã do segundo dia:

Pré-fermento do dia anterior
100 g de farinha de centeio integral
200 g de farinha de trigo branca
200 g de farinha de trigo integral
30 g de bagas goji
1 colher de sopa de mel
1 colher de chá de sal
Um fio de azeite


Demolhar as bagas em água quente durante 3 minutos.

Retirar as bagas para um prato. Medir 200 ml do líquido e deixar arrefecer.

Quando o líquido estiver tépido, juntá-lo, bem como o mel, à mistura do dia anterior. Envolver bem e juntar as bagas goji.

Noutro recipiente, misturar as farinhas e o sal. Abrir uma cova no meio e verter a mistura anterior. Tapar com a farinha que estiver nas margens e deixar repousar cinco minutos.

Bater na batedeira profissional durante 6 minutos a velocidade 2 ou amassar à mão.

Lavar a taça de vidro e untar com azeite. Colocar a massa depois de batida, virando-a em todos os sentidos para a cobrir de azeite. Tapar com o saco de plástico e deixar repousar durante 4 horas.


Second day - early morning

Mix from the previous day
100 g whole rye flour
200 g white wheat flour
200 g whole wheat flour
30 g goji berries
1 tablespoon honey
1 teaspoon salt
A dash of olive oil


Put the berries in hot water for about 3 minutes. Take out the berries, measure 200 ml of the liquid remaining. Let it cool.

When the liquid is warm, mix it, as well as the honey, with the starter from the previous day. Mix well with a wooden spoon and then add the berries.

In another bowl, mix the flours and the salt. Open a pit in the middle of the flour mix and add the starter. Cover with the flour that remains on the sides and let it rest, covered, for about 5 minutes.

Knead the dough by hand or using the machine (speed 2 for about 6 minutes).

Wash the glass bowl and grease with olive oil. Put in the dough and make it go around so that it gets covered in olive oil.

Cover with the plastic bag and let it rest for about 4 hours.



Hora de almoço do segundo dia:


Retirar a massa para uma superfície enfarinhada e delicadamente espalmá-la e dobrá-la em forma de envelope. Repetir a operação três vezes.

Colocar a bola de massa num tabuleiro de ir ao forno forrado com papel vegetal, salpicar com farinha, tapar com o saco de plástico e deixar levedar mais 3 horas.

Ao fim desse tempo, dar um corte na massa e levar ao forno a 230º durante 20 minutos. Baixar a temperatura para 200º e deixar cozer durante mais 30 minutos. Desligar o forno e deixar o pão a acabar de cozer durante mais 10 minutos.

Retirar do forno e deixar arrefecer antes de fatiar.


Second day - lunch time

Take the dough out of the bowl to a surface dusted with flour. Gently, spread it and fold it as if it were an envelope. Repeat this procedure three times.

Put the dough in a baking sheet dusted with flour (or with parchment paper lining), sprinkle some flour on top, cover with the plastic bag and let it rest for another 3 hours.

With a sharp razor blade, make a cut in the dough. Put it in the oven at 230º for about 20 minutes, then lower the temperature to 200º for 30 minutes more. Turn off the oven and let the bread rest inside for another 10 minutes.

Take the bread out of the oven and let it cool before cutting.

  3. Cá estou eu a "espiolhar" este pãozinho!
    Não acertei na farinha, vi o interior quase amarelado e não me ocorreu que pudesse ser centeio.
    Adorei a receita com o detalhe de todos os passos.
    Como preparas o isco de centeio?
    Já fiz um uma vez, mas o pão cresceu muito pouco, embora tenha ficado bastante saboroso.
    O teu tem uma aspeto fantástico, o miolo arrendado e uma boa crosta! Bela participação.

    1. O interior amarelado é mesmo devido às goji! :-) E o escuro do centeio ficou compensado com o uso parcial da farinha branca, para além da integral.

    I never had Goji berries. How do they taste?

    1. They are kind of sweet but not too sweet, and they have an excellent aftertaste that is really hard to describe! They are very common in Japan and are getting to be known here in Europe as well.
