Pão de mistura com sementes de papoila

O pão de mistura é um dos meus preferidos, sobretudo quando leva sementes. Este ficou aromático e bonito e com ele participo no World Bread Day 2013.

This loaf of bread with poppy seeds is my contribution to the World Bread Day 2013. As this is an international initiative, you'll find the english translation of every step.






Noite do primeiro dia:

120 g de isco de trigo
200 g de farinha de trigo integral
210 g de água tépida

Misturar tudo numa taça de vidro. Tapar com um saco de plástico e deixar repousar à temperatura ambiente durante 12 horas.



First day - around dinner time

120 g wholewheat starter
200 g wholewheat flour
210 g lukewarm water

First step - feed the starter. Mix everything in a big glass bowl. Let it rest on the kitchen table, covered with a plastic bag, for about 12 hours.



Manhã do segundo dia:

Pré-fermento do dia anterior
50 g de farinha de espelta
50 g de farinha de milho
445 g de farinha de trigo branca
20 g de sementes de papoila
7 g de sal fino
200 g de água tépida
1 colher de sopa de mel
Azeite qb


Misturar as farinhas com o sal e as sementes. Abrir uma cova no meio.

Na taça do dia anterior, acrescentar o mel e a água e mexer bem. Verter a mistura na cova das farinhas.

Bater na batedeira profissional a velocidade 2 durante 8 minutos.

Lavar a taça de vidro usada no dia anterior, untar com azeite e colocar aí a massa. Tapar com um saco de plástico e deixar repousar 3 horas.

Dar umas voltas à massa para desgaseificar, formar uma bola e colocar num tabuleiro de ir ao forno forrado com papel vegetal. Tapar com um pano húmido e deixar repousar mais 4 horas.

Levar ao forno pré-aquecido a 230º. Após 15 minutos, baixar a temperatura para 200º e deixar mais 30 minutos. Desligar o forno, deixando o pão no interior a acabar de cozer durante mais 15 minutos.

Retirar do forno e deixar arrefecer antes de fatiar.




Second day - early morning

Mix from the previous day
50 g spelt flour
50 g corn flour
445 g white wheat flour
20 g poppy seeds
200 g lukewarm water
1 tablespoon honey
7 g salt
A dash of olive oil


Mix the water and the honey with the starter from the previous day. Mix well with a wooden spoon.

Mix the flours, the poppy seeds and the salt. Open a pit in the middle of the flour mix and add the starter. Cover with the flour that remains on the sides and let it rest, covered, for about 5 minutes.

Knead the dough by hand or using the machine (speed 2 for about 8 minutes).

Wash the glass bowl and grease with olive oil. Put in the dough and make it go around so that it gets covered in olive oil.

Cover with the plastic bag and let it rest for about 3 hours.

After the resting time, gently fold the dough a couple of times and shape it in a ball.

Put the dough in a baking sheet with parchment paper lining, cover with a damp cloth and let it rest for another 4 hours.

Put it in the oven at 230º for about 15 minutes, then lower the temperature to 200º for 30 minutes more. Turn off the oven and let the bread rest inside for another 15 minutes.

Take the bread out of the oven and let it cool before cutting.
